Scallion & Mushroom Pancake

My mom made congee with our leftover turkey from Thanksgiving and I was thinking to myself: What goes great with congee? Scallion pancakes! I also added some cremini mushrooms for extra flavors.

Ingredients:

2 cups flour
1 cup hot water
1 cup thinly sliced scallion
1 cup mushroom
Salt (to taste)
Olive oil

Instructions:

1. Mix flour and hot water to create dough.
2. Add scallions, mushrooms and salt to the dough and knead. This will ensure that all the ingredients are well mixed.
3. Add flour if you feel that dough is too sticky.
4. Divide the mixed dough into approximately ten pieces. (Depends on how big or small you want the pancake to be)
5. Add oil to a heated nonstick pan and cook for approximately 2 minutes on each side.
6. Optional: Wrap the pancakes with a paper towel to soak up any excess oil.
